Compare responsibilities
A franchise may provide a brand and operating framework, subject to its agreement. An independent concept gives you more control, but you must develop products, sourcing, training and standards yourself.
Compare the written terms
Ask what fees buy, which supplies are required, what support is included and what decisions remain yours. For an independent concept, list the work and cost of creating those systems.
Think about your working style
Do you want room to change the menu and suppliers, or would you prefer an established framework? Neither approach removes the need to manage people, cash, stock and customers.
Decide with evidence
Compare itemised budgets and operating responsibilities. Ask questions before signing, and get appropriate professional review of an agreement you do not understand.
